AMATA Modern Thai is the culmination of Chef Pinyo’s remarkable culinary journey, which started in the street stalls of Bangkok, where he first absorbed the soul of Thai cooking: bold flavors, balance, and heart. That foundation carried him into the kitchens of Bangkok’s most prestigious five-star hotels, where he learned the precision and discipline that would define his career. From there, his talent took him around the world, working on opening teams for acclaimed restaurants in Dubai, Abu Dhabi, Singapore, and San Francisco, before eventually landing in Las Vegas. It was here that he rose to become Executive Chef at the internationally renowned Hakkasan Restaurant.
After 20 years of stories and experiences across the world’s finest kitchens, Chef Pinyo opened AMATA Modern Thai to bring something personal and intentional to Las Vegas diners. The concept centers around a simple but meaningful idea: Old World Thai, New World Style. The food honors the authentic foundations of Thai cuisine while presenting it with a modern edge, where every dish carries the weight of the journey behind it.
Located at 5597 S. Rainbow Blvd in Spring Valley, AMATA is open daily and offers dine-in, delivery, and pickup. Golden Hours run weekdays from 3:30 to 5:30 pm with drink deals, and the kitchen stays open late on Friday and Saturday nights for those who like to eat well after dark.
This was the best khao Soi I’ve ever had. You have to get the signature bone marrow one ! The crab fried rice had a hefty amount of crab as well. Everything came out hot and fresh. Service was awesome. She packed the food personally.
This modern Thai restaurant exceeded my expectations. Every dish was full of vibrant, authentic flavors presented with contemporary flair. The plating was truly impressive—artistic without being overdone. The service was excellent; the staff were warm, knowledgeable, and attentive throughout the meal. Overall, a wonderful dining experience that I would happily return for.
